Vegan Butternut Squash


Servings: 4

Ingredients:

  • 1 small to medium-sized butternut squash (about 2 pounds)
  • 1 tablespoon olive oil
  • 1 sprig of sage
  • 1/2 cup thinly sliced leeks
  • 1/4 cup thinly sliced carrots
  • 1/4 cup thinly sliced shallots
  • 1/4 cup thinly sliced onions
  • 3 garlic cloves, smashed
  • 1 tablespoon honey
  • 4 cups vegetable stock
  • Bouquet Garni made of 4 sprigs thyme, 1 sprig Italian parsley, 1 bay leaf, and 1/4 teaspoon black peppercorns, tied in a small bundle
  • 2 tablespoons greek yogurt (plain) – add plant-based yogurt if preferred
  • Freshly grated nutmeg
  • 1 teaspoon minced chives
  • Extra-virgin olive oil

Instructions:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Cut the neck off the squash, and cut the bulb in half. Scoop out and discard seeds.
  3. Brush each half inside and out with olive oil. Sprinkle with salt and pepper and tuck a sage sprig into each half.
  4. Place cut-side-down on a baking sheet and roast for about 1 hour until completely tender.
  5. Let the squash cool, then scoop out. 
  6. Peel and cut the neck of the squash into 1/2-inch pieces. 
  7. In a stockpot over medium-high heat, add olive oil, leeks, carrots, shallots, and onions. Cook for about 6 minutes.
  8. Add diced squash, garlic, salt, and pepper. Cook for 3 minutes.
  9. Stir in honey and cook for an additional 2-3 minutes.
  10. Add vegetable stock and the bouquet garni. Bring to a simmer and cook for 10-15 minutes until the squash is tender.
  11. Add the roasted squash to the pot and simmer gently for about 30 minutes.
  12. Remove from heat and discard the bouquet garni.
  13. Transfer the soup to a blender in batches and purée. Strain through a fine sieve into a bowl.
  14. Taste and adjust the seasoning. 
  15. In a separate bowl, mix greek yogurt with nutmeg. Whisk until it holds a shape. Refrigerate.
  16. Ladle the soup into serving bowls.
  17. Top each with a dollop of greek yogurt, grind black pepper, sprinkle chives, and drizzle with olive oil.
