Roasted Vegetable and Chickpea Sheet Pan Delight

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 2 medium zucchinis, sliced
  • 1 red onion, chopped
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a large mixing bowl, toss together the chickpeas, zucchinis, red onion, red bell pepper, and yellow bell pepper with the olive oil, oregano, salt, and pepper.
  3. Spread the mixture onto a sheet pan in an even layer.
  4. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and lightly browned.
  5. Serve warm as a main dish or side dish.

Feel free to customize with your favorite vegetables and spices, or what’s available from your garden or local market. It’s also a great way to use up any produce you have on hand.
