1 cup Cauliflower, Steamed & Mashed
2 Tablespoons Smart Balance Butter
1/2 cup Shredded Light Mozzarella
Dash of salt & pepper
Directions:
Bake at 400 degrees for 15 minutes

I never could eat mashed potatoes. They made me gag! But for some reason, my stepdad just didn’t get the message! Everytime I gagged, he’d beat me up. He’d even fill my plate with the crap forcing me to eat it all w/o choking. Of course, I could never make it, and he’d kick my ass! Right in front of my mom and sister. Even scalloped spuds would set off the gag reflex! One time, Mom made some potatoes that looked like rice, and I ate it up, no problem! When I asked what her what it was, she told me they were mashed potatoes. Sure enough, I gagged, and you know what came next. Wish I’d known about this sooner. Would’ve saved me from a whole lotta pain!
