GOLDEN SOUP
This nourishing golden soup combines the power of fermented foods with anti-inflammatory spices to support your gut microbiome and reduce inflammation. The key ingredient, fermented cabbage or sauerkraut, provides beneficial bacteria that help maintain gut barrier integrity. Combined with turmeric, ginger, and bone broth, this soup offers a powerful combination for gut and joint health.
Ingredients:
– 2 cups organic sauerkraut (raw, unpasteurized)
– 4 cups bone broth (or vegetable broth for vegan option)
– 1 medium onion, diced
– 3 carrots, chopped
– 2 celery stalks, chopped
– 2 tablespoons fresh ginger, minced
– 2 cloves garlic, minced
– 1 tablespoon turmeric
– 1 teaspoon black pepper
– 1 tablespoon coconut oil
– 1 cup shiitake mushrooms, sliced
– Sea salt to taste
– Optional: 1 cup coconut milk for creaminess
Instructions:
1. Heat coconut oil in a large pot over medium heat. Add onions, carrots, and celery. Sauté until onions are translucent (about 5 minutes).
2. Add garlic, ginger, and mushrooms. Cook for another 3 minutes.
3. Add turmeric and black pepper, stirring to coat vegetables evenly.
4. Pour in bone broth and bring to a gentle simmer. Cook for 15-20 minutes until vegetables are tender.
5. Reduce heat to low and stir in sauerkraut and coconut milk (if using). Heat through but do not boil to preserve the beneficial bacteria.
6. Season with sea salt to taste.
Serve hot, garnished with fresh herbs if desired.
