TOFU SCRAMBLE

Ingredients
1 C baby spinach
1 small tomato, chopped
1/2 C crumbled firm tofu
1/2 avocado, cubed
1/2 tsp garlic powder
1/2 Tbsp extra virgin olive oil
Instructions
- Heat a nonstick skillet over medium heat, lightly coat with nonstick spray or oil.
- Add tofu and garlic powder, saute till almost golden brown.
- Add tomatoes and spinach, sauté until spinach is wilted.
- Place on plate, top with avocado cubes.
Serving Suggestion:
Place over sweet potato “toast” or whole grain bread
